Cinnamon Roasted Almonds

A few years ago, my classmates and I went to the Scarborough Fair. That trip stirred up some feeling and started some drama and it also sparked trust issues between some close friends. After all was said (and a lot was said) and done, we all kind of became okay again; except for that one person who was the main reason everything started, but I could could care less because we would never get along. After going to dinner with a few friends some time later, I learned that the same person who caused all of the chaos before was trying to start drama once again; I guess some people never change.  I was glad that that was my last year in public school.

Anyway, back to the fair food.
When we were getting ready to leave, we smelt this delicious aroma and we discovered that is was coming from a small stand selling sugar-coated nuts. A few of us bought the biggest bags that they had and munched on them while traveling the long distance back to school. When I finally finished my bag, I decided that it couldn't possibly that hard to make them myself and I found a recipe online. I ended up taking a container to school & shared them with my friends in chemistry class who were taking them by the handfuls.

I though about making them again, but when I went looking for the recipe it was nowhere to be found.
I remember that the recipe was really simple with 1 egg white, cinnamon, sugar, and you cooked it on low for like 1 hour.  I found a few recipes, but they weren't like the once I used until I came across this recipe. This is a great recipe for the holidays and to package to give as gifts or party favors.

Cinnamon Roasted Almonds

1 large egg white
1 tsp water
2 1/2 cup almonds
pinch of salt
2 tsp cinnamon
2 Tbsp brown sugar
1/4 cup white sugar

1. Heat oven to 250F and line a baking sheet with parchment paper or a silo mat
2. In a large bowl, whisk the egg white and water until frothy.
3. Whisk in the cinnamon, salt, brown sugar, and sugar until blended. Using a spoon or spatula, fold in the nuts to evenly coat. Pour the nuts onto the prepared pan in a single layer.
4. Bake for 1 hour, flipping over every 15 minutes.

  1. Just baked these almonds this morning and they are amazing! :-) I couldn't help but eat a handful while they were cooling. Thanks so much for uploading the recipe Rayna!
