Color is overrated

Hi. 
I'm Rayna
-I'm a freshman in college living on a ranch in a small country town with all kinds of animals with my family. 
-I'm an avid list maker which you'll see below.
-I was diagnosed with Systemic lupus erythematosus {autoimmune disease} about 2 months after my 17th birthday which I talk about from time to time. 
-I also discovered I have a dairy sensitivity so I'm trying to limit the amount of dairy products I use and consume, though I make a lot of dairy-filled recipes for family and co-workers.
-I'm not the biggest fan of red meat -I do love BBQ and a good  rare steak, but I can only eat a few bites before I want to switch to veggies. I could easily live off of green beans, sweet potatoes, spinach, and apples for the rest of my life.

Things I love..
  • Baking
  • Animals (big cats, horses, and pit bulls are the top 3 favs)
  • hand raising orphaned baby animals -Yes, I miss a lot of sleep because of getting up every few hours for feeding, but watching them grow up to be healthy adults and knowing you are the reason for it makes it all worth it.

  • Spoken Word Poetry 
  • DIY projects
  • country music, mostly Texas Red Dirt
  • black coffee with or without sugar
  • dark chocolate with sea salt
  • cowboy boots 
  • crocheting and knitting
  • candles

  • Autumn/Fall 
  • tattoos
  • roasted green beans with broccoli florets {my go-to dinner for myself}
-I have a love/hate relationship with my blog. Sometimes I love writing and sharing posts, but I get in a rut and not inspired to write or share anything.

Things I dislike or hate..

  • Lima beans
  • desserts that are too sweet
  • Really cold weather {I like the idea of snow, but my body can't handle the super cold temperatures}
  • milk chocolate
  • cookbooks without pictures.
  • most reality t.v shows
  • being on Prednisone 
  • Volkswagen Beetle

My dad has Frontotemporal Dementia (its form of Dementia; somewhat like Alzheimer's) He has been diagnosed for about 7 years now. He turned 52 this year. He is my main "guinea pig" when it comes to trying out new recipes, especially if they have "sugar" or "chocolate" in the ingredient list.

    I found a posting of your zucchini bites on Pinterest and it brought me to your blog. Now I think it was kind of fate...I was reading your blog and read that your Dad has dimentia- my Mom has Pick's disease, she was diagnosed at 52. You are the only person I have met who has a parent with this disease. It is nice to see that you have found something that brings the both of you joy and that you can share together. Keep cooking.
