Cupcakes for Dad

   Today is my dad's birthday.

   And a lot has happened this week & I tried a new recipe which is why I have posted for the last few days in a row which I normally don't do. The next actual post will probably Monday or Tuesday since Sunday I am making dinner for the family (about 14 people) so I'll be busy this weekend. I may post a picture if something good happens or an early picture of Sunday dinner.

    I had originally though about making him Nigella's chocolate cheesecake, but I didn't realize that his birthday was just a few days before Sunday dinner, which I am making the dinner and dessert. Plus, we only had 1 bar of cream cheese so that meant no cheesecake and only a few eggs left in the fridge.

   I went of the search for a good chocolate recipe. I found many that were very decadent and that looked incredible, but my dad isn't into big, fancy, complicated things; he is just as happy with a batch of cookies or brownies.  I found a lot of recipes that involved nutella, but I'm not sure if he likes it because every time I try to get him to try some he says he is full or that he just brushed his teeth. excuses. My mom even tried it and liked it.

Broccoli & Cauliflower Mash



Since my dad is termanally ill; his appetite has changed.
Well, sorta.
He likes southern food,biscuits& gravy, pork chops, sweets, dessert,chocolate, potatoes and fried fish.
Did I mention sweets?
One down side of this disease is that his sweet tooth is the size of an elephant.
But, he isn't too keen on healthier things like broccoli,brussel sprouts, steamed fish, and mushrooms. And trying to trick him into eating a veggie burger while telling him that it is a regular burger is not a smart idea.
Its kinda like cooking for a picky child.

The other day, I came across a recipe for mashed cauliflower; It was suppose to be like "fake" mashed potatoes. This was my plan, but then some medical stuff (mine, not my dad's) came up and I forgot all about the cauliflower that was sitting in our fridge. Well, last night I felt a bit better and decided to make a mash of broccoli and cauilflower and then making fritters out of them. like salmon cakes, which my dad loves, so I thought if I fried the mash then he would not ask what he was eating.
