The other day at work we ordered in lunch from Cindy's Deli and I got their caesar salad. The salad is served with extremely juicy and tasty chicken, tomatoes, croutons, and a delicious, yet unique caesar dressing. Needless to say next time we order from Cindy's I know what I'll be getting.
That night I decided to make a caesar dressing that I bookmarked a long time ago, but it turned out to be extremely harsh due to the large amount of garlic and dijon mustard compared to the small amount of dressing it actually produced. Unlike the traditional caesar, this recipe doesn't contain anchovies, raw egg, garlic, or worcestershire sauce, but that doesn't mean it's any less tasty. You could even serve this instead of ranch with a veggie tray at your next party.

Candied Cherry Sauce
This sauce is really simple to make.The only thing you really have to be careful of is to have the right saucepan-to-sauce ratio because the cherries will produce a lot of bubbles since they are cooked over high-heat and the last thing you want to happen is for it to bubble over and make a big, sticky mess.
You can serve this sauce over yogurt, ice cream, cake, or blend it into different drinks: the possibilities are endless. When I first made this recipe, I cut it in half since I'm stingy with my ingredients and I wanted to make sure it was a good recipe since I've tried plenty of other recipes that didn't turned out well. And seeing that I made this recipe twice in 1 week, I say that it is definitely a winner! And the end product can last in the fridge for months, though it only lasted 2 weeks in our house before I made another batch.

Buttermilk Oatcakes & Berry Compote
These oatcakes (like pancakes) are great because they are filling, healthy, and have a good chew from the oats. The creator of this recipe wanted to show how easy a high-fiber & healthy breakfast could be without butter and extra fats.
The oatcake recipe can be categorized as having "no refined sugars" if you leave out the sugar which is what I did. This recipe makes 12 pancakes so having only 1 tbsp of sugar doesn't really matter; you could add more sugar if your family likes sweeter pancakes. I left out the sugar and just topped the cakes with the compote and some extra maple syrup and both my dad (who loves sugar) and I were happy with how they tasted. In the magazine, this recipe is labeled as high fiber, heart healthy, low cholesterol, and healthy weight.

Chipotle Turkey Burgers with Avocado Mayo
This will be a short post since I have school work to do that I've been kind of neglecting, 2 kittens who seem to have more energy than I do and a never ending appetite, and a few recipes that I have to find and try out for this weekend.
I'm actually not a big red meat eater when compared to my dad, but I do like a good burger and a rare-medium steak, and of course I love BBQ, but those things aren't always that good for you. So that is why I like to eat veggie burgers, but I don't ever remember eating a turkey burger, so I decided to make a recipe since we had some turkey in the freezer. I based this recipe somewhat off this Southwestern Black Bean Burger recipe and I decided to make an avocado mayo to oppose the heat from the chipotle.

Homemade Whipped Cream
Sweetened Whipped Cream
Adapted from: Anyone Can Cook Magazine
makes: 16 2-tablespoon servings
*** I used a glass bowl and placed it in the freezer to chill for about 20 minutes or so.
1. In a chilled bowl, combine 1 cp. whipping cream, 3 tbsp. sugar, and 1/2 tsp. vanilla extract.
2. Beat with a hand mixer on medium-high for about 8 minutes or until soft peaks are former.
Since I was baking 1 apple for me I made some changes and made enough whip cream for 2-4 serving.
What I did:
Cinnamon Whipped Cream
makes 2-4 servings
Serve over warm baked apples, hot chocolate, coffee, pie or whatever your heart desires
