Double Chocolate Cakies & Finishing Senior Year.

   I have been wanting to make this and this recipe for a while now, but it always got put off until today. The recipe is for double chocolate cakies by multiply delicious which is a blog that I have bookmarked several recipes since finding out about the paleo diet. This recipe is...gluten free, dairy free, refined sugar free, paleo, and it satisfies your chocolate craving (without the guilt). A cakie is like a cookie-sized cake without the icing.
   I had to make a little adjustment to the recipe, but they came out great. The recipe made 10 cakies, but the last one was bigger since it had enough batter for 1 1/4 cakies which I added a few more chocolate chips and some shredded coconut.
                           
   These are also are ready in less than 30 minutes from start to finish which is great especially when i'm finishing the last of my finals. It's hard to believe that in a few days I will be officially finished with the high school portion of my education.This morning I was going through the t.v channels and found a show that I used to love and I then noticed the year it aired and I felt old. Yes, I know that even though I'll be 18 in August i'm not that old, but it seems like yesterday that I was in elementary school taking my bunny to school (country life) so we could play with him at recces and my biggest worry was who I was going to sit by at lunch time. I now understand what people meant when they said that school goes by fast, even though at the time I thought it was going by slower and slower with each passing day. To be truthful it's all a little unnerving. But these cakies help for now.

Double Chocolate Cakies
yields: 10-12 cakies (I got 10)

1 cup bananas, mashed (2-3 bananas*see note)
3 1/2 tsp cocoa powder, unsweetened
2 tsp vanilla extract
1/4 tsp salt
1 tsp baking soda
2 tbsp almond butter
1/2 tsp cinnamon
1 1/4 cup almond flour/meal
1/4-1/2 cup chocolate chips

1. Preheat oven to 350F and line a baking sheet with parchment paper, set aside.
2. In a bowl, mix together all of the ingredients except the almond flour and chocolate chips.
3. Slowly stir in the almond flour until mixed before stirring in the chocolate chips.
4. Scoop out the batter using a ice cream scoop and place on the prepared pan a few inches apart.
5. Bake the cakies for about 15-17 minutes or until the tops are slightly golden and firm -You can insert a toothpick and if it comes out clean with a light crumbs then they are done.
6. Let the cakies cool on the pan for a few minutes before transferring them to a cooling rack to cool completely. These are best kept in the fridge so they last longer and taste even better the next day.

Notes:
*I mashed up 2 bananas, but discovered that it only was 3/4 cup so I added in 1/4 cup natural apple sauce.
- I used a 18/10 ice cream scoop and got 10 cakies, even though the last one was bigger since there was extra batter left over, but not nearly enough to make another cakie.
- You could try other nut butters if you like. Natural peanut butter may be a little overpowering in this though because when I made this recipe with peanut butter it was too strong when compared to using almond butter.
- you could use a small ice cream scoop/cookie scoop to make mini cakies- you would just have to adjust the baking time maybe to 10 minutes.

    Time goes by very fast, it seems yesterday I turned 18 (and I felt old, too) and next year I'll be 25. How long will it take until I'm 30?
