White Chocolate Biscoff Blondies & A blog Award.

    This weekend was the slower than normal. Gus Gus & Charlie are growing by the day and are now attacking toes and fingers if you aren't paying attention. My mom finally found out what was wrong with her and it had nothing to do with the bug bite she got, but the medicine the doctor gave her isn't helping with the itching. 
  Sunday we stayed home and when I checked my email, I found that my blog has gotten a Liebster Award. Thanks to Sarah from Engineered Crochet. The purpose of the Liebster Award is to give new blogs (less than 200 followers) more exposure by picking 5 blogs to receive the award, and they will each pass it along to blogs they like. It's a way to get more followers, encourage you to keep on blogging about what you love, and to help people discover blogs that they may would have found any other way.

  I had a lot of recipes for apricots since we bought a box from the co-op, but I had a doctor appointment on Saturday morning (pick up time for the co-op)so a co-workers wife picked up our purchases for us which my mom will bring home Monday night. I was thinking about making a jar of apricot jam, poached vanilla apricots, and fruit leather (which is way easier to make than I originally thought). 
  I decided to make a something using Biscoff spread this weekend since I haven't made or really tasted it since I bought the jar. When I first tasted the spread I thought it was okay. When I tasted the spread today, I finally realized why it was so popular: it's creamy and taste like a mixture between cookies, butterscotch, and for some reason reminds me of gingerbread.  This recipe is prepared a little different from what you normally do. There is no creaming of the butter and sugar, no slowly adding the the dry mix into the wet, and it turns out perfect. 
White Chocolate Biscoff Blondies
Recipe: Picky Palate


1/4 cup (1/2 stick) butter
3/4 cup white chocolate chips
1 cup all purpose flour
1/2 cup sugar
1/2 tsp cinnamon
1/2 tsp baking powder
1/2 tsp salt
1/2 cup white chocolate chips
2 eggs (I used large)
1/2 cup Biscoff spread


1. Preheat the oven to 350F. Line an 8X8 pan with foil and spray with non-stick cooking spray.
2. In a heat proof bowl, add in the butter and heat in the microwave for 30-45 seconds until fully melted. Add in the 3/4 cup of chips and let sit to let the hot butter melt the chips. Stir until smooth -you may have heat the mixture in the microwave for 20-30 seconds more or until the chocolate is melted.
3. In a medium-large bowl, add in the flour, sugar, cinnamon, powder, and salt and whisk until incorporated. Add in the butter mixture and the remaining chips and stir lightly. Add in the Biscoff spread and the eggs and stir until combined. 
4. Pour the batter into the prepared pan and bake for 30-35 minutes. 
I lifted the blondies out of the pan using the foil as a handle and onto a cooling rack right after it can out of the oven or you can wait and remove it from the pan after it cools down a little more. Let the blondies cool completely before cutting into 12 pieces. 


-I actually cut the 12 pieces into smaller pieces since the blondies are sweet and rich.
