Almond Banana Chocolate Chip Muffins (Paleo)

   I have another paleo recipe to share with ya'll. I actually made these Tuesday night since we had a big bunch of bananas that were ripe and it would be the last time I wouldn't be able to eat the rest for about 1 week. Wednesday I has another dentist appointment to fill some cavities that were caused by the amount of medications I take and I ended up being there for 3 hour since my dentist is also the only "main" dentist in the office so she goes between patients. Last time I got work done, I couldn't eat solid food for about a week and now that I have a temporary crown I may go longer since I don't want to mess anything up.
   By the time we left we had to head over to the next town's DPS office to go take my driver's test. I had an  appointment, but we ended up getting there 2 1/2 hours early, stood in a long line, filled out some paperwork, waited, got called, filled out more papers, and then went outside to wait to take my test. Well after waiting in a long line of vehicles and it being well after my appointment time, my time for my test finally came and I passed! I was only really worried about parallel parking since that's the first thing they test, if you fail that then you can't move further with your test, and I had heard horror stories of instructors yelling at the kids and then driving them back to the office so everyone would know that they failed. Also the last time I had parallel parked was when I was taking the driver school when I was a sophomore and I was in a small car instead of our truck. I ended up parallel parking perfectly and the whole test lasted only about 10 minutes.
 Since I wouldn't be able to eat the rest of these muffins for a while, I ended up putting most of the in a freezer bag to enjoy another time.

>Update: My uncle who doesn't normally eat foods made specifically for special dietary needs (i.e gluten free, sugar free, or dairy free) loved these muffins and asked for some more next time I make another batch. 

Almond Banana Chocolate Chip Muffins (Paleo)
yields: 12 muffins

3/4 cup almond butter
3 medium ripe bananas, mashed
2 large eggs
1 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1 cup almond flour/meal
1/3-1/2 cup mini chocolate chips

1. Preheat oven to 350F and line a 12 muffin tin with liners.
2.In a medium bowl, mix the almond butter, bananas, eggs, baking soda, baking powder, and cinnamon until combined. Fold in the flour and chocolate chips.
3. Divide the batter between the muffin cups and top with extra chips. Bake for 20-25 minutes or until a toothpick comes out clean.

Notes:
You could try using another type of nut butter.

  5. This is the BEST banana muffin recipe EVER! The whole family loved them and I will not likely make any other recipe ever again! Instead of chips, I broke up a Trader Joe's dark chocolate bar. It had a high cocoa content. So good!

      I'm thinking I might try making a few different versions of this muffin to see if they top this version.
