Sweet Potato Casserole for Thanksgiving


Sweet Potatoes are good.
I like them mashed, roasted, fried, or just baked and topped with cinnamon and butter.
Sweet potato casserole is one of my favorite things during the holidays.
I got this recipe from Saveur
I loved the fact that this recipe has both a streusel topping and marshmallows.That way the people who like mashmallows on their sweet potato casserole get what they want and the people who prefer nuts can also be happy. My grandma couldn't stop raving about these and of course I gave  her the recipe.

I used pecans inplace of cashews for the topping; with the dish I used, I had enough topping to cover about 2/3's of the casserole instead of just half.

Sweet Potato Casserole
Adapted: Saveur's recipe
serves: 10-14

4 lbs. sweet potatoes (about 5 potatoes)
1⁄2 cup evaporated milk
1⁄2 cup sugar
6 tbsp. unsalted butter, melted
1 1/2 tsp. vanilla extract
1⁄2 tsp. kosher salt
1⁄2 tsp. ground allspice
(I used apple pie spice)
2 eggs, beaten
3⁄4 cup roasted salted cashews, chopped
 (I used pecans)
1⁄2 cup light brown sugar
3 tbsp. flour
2 cups mini marshmallows


 
1. Heat oven to 400°. Place sweet potatoes on a parchment paper–lined baking sheet; bake until soft, about 1 1⁄2 hours. Let cool.
2. Reduce oven temperature to 350°. Peel potatoes; pass them through a food mill into a bowl or just mash them really well. Whisk in evaporated milk, sugar, 4 tbsp. of the butter, vanilla extract, salt, allspice, and eggs. Transfer to a 2-qt. oval baking dish.
3. In a food processor or a small bowl, combine the nuts, brown sugar, flour, and remaining 2 tbsp. of butter until coarsely ground. Crumble the mixture over half of casserole; top other half with marshmallows.
4. Bake until marshmallows are golden brown, about 30 minutes.

Note: To reheat leftovers, you can put it in a mini loave pan (or any oven safe dish that is the right size depending on the amount of leftovers you have) and put it in a heated oven(300-350 F), covered for about 20-30 minutes or until they are hot. This is good if you are cooking dinner in the oven and the casserole can be cooked right along side it and will be ready as dessert.
